The agalati (bread delivery carrier) transports the bread on a bicycle through the cahotic streets of Cairo, congested traffic, mass of pedestrians, and narrow back-streets of Cairo on trays up to 2.5 meters long and weighing between 30 to 35 kilos. Ding! Ding! Ding! Once again I jumped startled by the slim figure on a bicycle, one hand on the brake handle and the other hanging onto a tray of bread delicately balanced on his head, wizzing by me, swerving and honking away. But this time I managed to get a shot of him as well as another aglati in the background.
